Carrot and Lentil Soup
Required Ingredients:
- ½ cup red lentils
- 1 sliced onion
- 450 g sliced carrots
- 5 cups vegetable stock
- 1 tablespoon ground coriander
- 3 tablespoon chopped parsley
Salt to taste
Put rinsed red lentils in a large saucepan. Add onion, carrot and vegetable stock. Mix well. Season with the salt to taste and bring to boil. Cover the pan and simmer gently for about 30 minutes. Toss with parsley and coriander and cook for a little longer. Pour the pan in a blender and process for a while. Return to pan and reheat. Serve hot.
Lentil
