The truth is, what makes you 'not-a-morning-person' could be the fact that you don't have the energy to get out of bed jubilantly every day. Recipe: Morning Glory Pumpkin Pancakes  
Required Ingredients:  
- 2 1/2 Cup Aunt Jemima Original Pancake Mix
- 3 tablespoons brown sugar
- 2 1/2 teaspoons pumpkin pie spice
- 1 teaspoon cinnamon
- ½ teaspoon ginger
- ½ teaspoon salt
- 1 egg
- 1 3/4 cup milk
- 2 tablespoons vegetable oil
- 2 tablespoons vinegar
- 1 cup pumpkin puree
To make easy pumpkin puree, use sweet pumpkins such as New England or Baby Pam, nor the large ones in the supermarkets. Cut the pumpkins in half and then scoop out the insides. Then place them face down on a baking sheet at 425 degrees for about an hour. After the pumpkins cool, the skins easily come off. Then mash with a potato masher.  
Mix together the liquid ingredients- milk, eggs, oil, vinegar, and pumpkin, which is actually creamier than liquid but you get the idea. Combine the dry ingredients now- pancake mix, sugar, pumpkin pie spice, baking powder, baking soda, ginger, salt, and cinnamon. Stir all of these together just enough to combine. Stirring to roughly will case the fibers in the flour portion of the pancake mixture to fall apart and leave you with runny pancakes.  
Heat a lightly oiled frying pan over medium heat. Pour about half a cup of batter onto the pan for each pancake. Brown on both sides and serve hot with butter and real pancake syrup.
