Mint Pesto Healthy Pasta Recipe
Required Ingredients:
- 16 ounce linguini pasta
- 6 tomatoes chopped
- 20 fresh basil leaves
- 10 fresh mint leaves
- 10 Lavender leaves
- 2 cloves garlic, chopped
- ½ cup pine nuts
- 3 tablespoons parmesan cheese
- 2 tablespoons ricotta cheese
- ½ cup chopped carrots
- ½ cup chopped cabbage
- ½ cup chopped capsicum
- 5 green chilies, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Boil linguini in preheated water for 8 to 10 minutes. Put tomatoes, basil, mint, lavender, garlic, pine nuts, parmesan cheese, ricotta cheese, olive oil, salt and pepper in a blender and blend with 2 tablespoons of boiling water until smooth.
Sauté carrots, cabbage, capsicum and green chilies in a pan. Combine all the contents and toss with the linguini pasta.
Serve hot.
