Thyme is an herb with a hint of other flavors such as mint, caraway, lemon and oregano, depending on the type of strain being used. It is best used fresh but more convenient if bought freeze-dried. New York Steaks with Thyme and Mushroom 

Ingredients

  • 1 teaspoon paprika

  • ½ teaspoon black pepper

  • 1 teaspoon fresh thyme or 2 teaspoons dried thyme

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • 1 teaspoon salt

  • 3 tablespoons butter

  • 4 ounces sliced fresh mushrooms

  • 2 tablespoons red wine

  • ½ pound New York strip steaks


Pound the steaks Mix together all the dry ingredients and sprinkle onto the steak.. Pound the steak and then sprinkle on the mixed salts and spices. Set aside. Melt the butter over the stove and add the mushrooms before it gets too hot. Let the mushrooms but don't overcrowd them. They will not brown if they are stuck together and will stay raw and rubbery. Cook for a few minutes until tender. Stir in the win until it has mostly evaporated. Remove the mushrooms from the stove but keep warm.

Heat butter on the stove on medium high. Fry the steak for five to ten minutes on each side, depending on how rare or well-done you prefer it. Once done, place on a platter and then top with the mushrooms and sauce and serve with a side dish of your preference, such as potatoes or stir fried fresh and crunchy vegetables. Origin

Thyme was originally found growing in the area which is now referred to as the Mediterranean, but it has also existed in Europe, parts of Asia and Africa as well for ages. Egyptians used it while embalming bodies before mummification and Ancient Greeks used it for antibacterial purposes. The Greeks also saw it as a symbol of courage and sacrifice. Perhaps that is why the female admirers of knights would place a sprig of thyme in their helmets before a duel. 

Historically, thyme has been documented to have been used to combat depression, infertility, and aid in the digestive process. For the latter reason, thyme has been used as a home remedy and was therefore inculcated into cooking, leading to the creation of thyme recipes.
